Honey Jalebi
Ingredients:
● Maida (all-purpose flour) – 1⁄2 cup
● Cornflour – 2 tbsp
● Thick curd – 1⁄2 cup
● Baking soda – 1 small pinch
● Turmeric or food colour – a tiny pinch
● Water – as required
● Pure Honey – 1⁄2 cup of Biju Thadathil Jamun Honey
● Cardamom powder – 1⁄2 tsp (optional)
● For Frying:
● Ghee or oil – for deep frying
Directions:
● Mix maida, cornflour, curd, baking soda and water to make a smooth batter.
● Ferment for 8–10 hours until light and bubbly.
● Pipe spirals into hot oil and fry on medium heat till crisp and golden.
● Warm honey using indirect heat (do not boil).
● Dip hot jalebis in Vaidacharya Wild Forest Honey for 30–40 seconds.
● Remove, rest briefly and serve warm.
