Honey Gajar Ka Halwa
Enjoy a healthier twist on the classic Indian dessert by replacing refined sugar with the natural sweetness of Biju Thadathil Farm Kashmiri White Honey. This rich and creamy carrot halwa is infused with aromatic cardamom and crunchy dry fruits, making it perfect for festivals, family celebrations, or a comforting homemade dessert.
Ingredients
- 4 cups Grated carrot
- 3 cups Milk
- 3 tbsp Ghee
- 4 tbsp Biju Thadathil Farm Multiflora Honey
- ½ tsp Cardamom powder
- Cashews and raisins (as required)
Method
- In a heavy-bottomed pan, combine the grated carrots and milk. Cook over medium heat, stirring occasionally, until the milk reduces and the carrots become soft and tender.
- Add the ghee and continue cooking, stirring well until the mixture becomes rich, glossy, and begins to leave the sides of the pan.
- Turn off the heat and gently stir in Biju Thadathil Farm Multiflora Honey. Avoid boiling the honey to help preserve its natural flavour and beneficial properties.
- Mix in the cardamom powder and garnish generously with roasted cashews and raisins.
- Serve warm as a comforting dessert or chill slightly for a delicious festive treat.
💡 Chef's Tip
For the best flavour and nutritional value, always add the Kashmiri White Honey after switching off the heat. This preserves its delicate floral aroma and gives the carrot halwa a naturally rich sweetness without overpowering the dessert.
